Brinjal Moru Curry / Vazhuthananga Moru Curry

Ingredients:
  • Brinjal - Half of 1 big
  • Thick Curd - 1 cup
  • Water as needed
  • Salt to taste
  • Coconut Oil - 1 tbsp
  • Mustard Seeds - 1/2 tsp
  • Red Chilly - 1 or 2 nos
  • Fenugreek Powder - 1 pinch
  • Hing / Asafoetida - 1 pinch
  • Red Chilly Powder - 1/2 tsp + 1 tsp
  • Turmeric Powder - 1/2 tsp + 1 tsp
Method
  • Wash brinjal well. Chop to small - medium size pieces.  

  • Add chopped brinjal to a kadai and add turmeric powder, red chilly powder and salt. Mix well with hands to coat well on the pieces. Switch on the stove. Cook covered on medium flame till pieces are cooked well. 

  • Add water if needed to the brinjal pieces and stir often.
  • Whisk curd to a smooth mix without lumps. Add water to dilute and salt to taste. Add to the cooked brinjal.
  • Heat oil in a pan. Add mustard seeds and let it splutter.
  • Add hing, fenugreek powder, red chilly and saute for few seconds. Add finely chopped onions and fry for a minute.
  • Further add turmeric powder and red chilly powder and cook till raw smell fades on low flame.
  • Season it over the gravy and serve. It should not be boiled.
