- Chana Dal - 1 cup
- Sugar - 1 cup
- Wheat Flour / Atta - 1 cup
- Maida - 1 cup
- Cardomom Powder - 1/4 tsp
- Ghee - 2 tbsp
- Turmeric Powder - 1/4 tsp + 1/4 tsp
- Water as required
Method:
- Soak chana dal for 2 hours. Drain and pressure cook for 4-5 whistles. Check if dal is cooked and soft.
- Drain excess water and keep aside.
- Take wheat flour, maida, salt, turmeric powder in a mixing bowl. Add required water and knead to a smooth dough.
- Transfer drained dal to a kadai. Add sugar and cardomom powder.
- Cook well till all the sugar dissolves.
- Stir continuously so as to not burn the mixture.
- The dal mixture will start thickening and starts forming a dough separating from the pan.
- Add a tbsp of ghee at this moment.
- Let it cool down.
- Pulse it in a mixer.
- Sieve it through a strainer to break all lumps and get a softer puran dough.
- Knead it for a minute to a smooth dough.
- Pinch lemon sized balls from both the doughs.
- Take atta dough. Flatten it to thick roti with palm or using roller. Place a puran ball and wrap it tightly as possible. Seal the ball. Remove if any extra dough is present on top of the stuffed ball. Repeat for rest of the dough.
- Roll it to thin chapathis.
- Heat a tawa and fry on both sides.
- Apply ghee (Optional).
