Uzhunnu Vada / Medu Vada / Urad Dal Vada

Uzhunnu Vada

Ingredients:

  • Urad Dal - 1 cup
  • Pepper Powder - 1/4 tsp
  • Onion - 1/2 small (Optional)
  • Green Chilly - 1 or 2 nos (Optional)
  • Baking Soda - a pinch (Optional)
  • Salt to taste
  • Water as required
  • Oil to deep fry
Method:
  • Wash and soak urad dal for 2 hours in warm water. Soaking in warm water helps in fastening the soaking process.
  • Add the soaked dal and salt in a mixer jar. Sprinkle some ice cold water and grind it for a few minutes.
  • Scrap off the sides of the mixer jar and add 1 to 2tsp of water at a time till you get a smooth fluffy batter.
  • Transfer the batter to a mixing bowl and beat well with a spoon for a minute or two.
  • Add green chillies finely chopped, onion finely chopped, baking soda and pepper powder. Check the salt.
  • To check if the batter is of the correct consistency, take a bowl with ice cold water and gently drop a small ball sized batter in the bowl. If it floats on top, the batter is as required. Beat the batter well till it floats. If the batter is too thin, add 1 to 2tbsp of rice flour to thicken the batter. 
  • Heat oil in a deep pan.
Making Vada:
  • Take a bowl filled with ice cold water. Dip your hands in water making sure water is not dripping from fingers. Take a small portion of batter in your right-hand palm, press the middle of the flattened batter with your thumb to make a hole.
  • Gently lower hand to oil, palm facing the oil and drop the batter. Make sure not to splash the oil.
  • Flame should be maintained in medium. To cook the vadas evenly, keep stirring the vadas in oil. Do not leave it unattended. 
  • Turn the vadas and fry till they turn crispy and golden.
  • Drain the excess oil on the vadas by placing on a tissue paper. 
  • Serve them hot.
