Soya Chunks Fry

Ingredients:
  • Soya Chunks - 100gm
  • Turmeric Powder - 1/2 tsp + 1/2 tsp
  • Red Chilly Powder - 1 tsp + 1 tsp
  • Salt - 1 tsp
  • Water - 1/4 cup + for soaking
  • Coconut Oil - 3 tbsp
  • Curry Leaves - 1 sprig
  • Onion - 2 big
  • Tomato - 1 big
  • Green Chilly - 2 nos
  • Garlic - 2 cloves
  • Ginger - 1/4 inch
  • Garam Masala - 1/2 tsp
  • Coriander Powder - 3/4 tsp
  • Salt to taste
Method:
  • Wash and soak soya chunks in enough warm water for atleast 20mins.
  • Remove from soaked water and rinse it for 3-4times. Squeeze off water from soya chunks using hand in batches.
  • Cut chunks to smaller pieces for masalas to absorb well.
  • Pressure cook soya chunks with salt, 1/2 tsp turmeric powder, 1 tsp red chilly powder and 1/4 cup water for 1 whistle. 
  • Heat coconut oil in a kadai and curry leaves. Add finely chopped ginger and garlic. Saute till the raw smell goes.
  • Add thinly sliced onions, split green chillies and 1 tsp salt. Saute till onions turn translucent.
  • Add finely chopped tomatoes. Add turmeric powder, red chilly powder, coriander powder and garam masala. Cover and cook for 10mins on low - medium flame.
  • Add cooked soya chunks and cook till all the water is evaporated. Soya will change color to brownish when it is dried well. It will take cooking on low flame for approx 20mins.
  • Sprinkle some coconut oil and curry leaves. Serve hot.
