- Potato - 2 to 3 big
- Turmeric Powder - 1/4 tsp
- Ginger- 1 small
- Lemon Juice - 1 to 2 tsp
- Cilantro Leaves - 1 to 2 tbsp
- Oil- 1 tbsp
- Water - 1 cup
- Wheat Flour/ Atta - 2 cups + 2 tbsp
- Salt to taste
- Red Chilly Powder - 1/2 tsp
- Coriander Powder - 1/2 tsp
- Garam Masala - 1/2 tsp
- Green Chilly - 2 nos
Method:
- Pressure cook potatoes with enough water for 2-3 whistles or till cooked well.
- Heat oil in a kadai. Add finely chopped ginger, green chilly.
- Mix in turmeric powder, red chilly powder, coriander powder, garam masala, lemon juice and salt to taste to the cooked potatoes.
- Mash potatoes with a masher.
- Cook till all the water is evaporated and masala is cooked well. This will take 10-15mins on low to medium flame.
- Switch off the stove and wait till the mixture cools. Add 2 tbsp of dry flour to the masala and mix well. This helps the mixture to bond perfectly and from cracking.
- Take 1 cup water in a mixing bowl. Add salt to taste and mix well.
- Add wheat flour to the bowl and knead to a smooth dough.
- Divide to lemon sized balls and keep aside.
- Flatten one dough slightly thick and place a tbsp of masala. Fold the ends and seal well. Repeat for all the lemon sized balls.
- Roll the paratha using a roller and pin.
- Cook on a tawa on medium flame till both sides are cooked well.
- Serve hot.
