Aloo Paratha / ആലൂ പറാത്ത

Ingredients:
  • Potato - 2 to 3 big 
  • Turmeric Powder - 1/4 tsp 
  • Ginger- 1 small
  • Lemon Juice - 1 to 2 tsp
  • Cilantro Leaves - 1 to 2 tbsp
  • Oil- 1 tbsp 
  • Water - 1 cup
  • Wheat Flour/ Atta - 2 cups + 2 tbsp
  • Salt to taste
  • Red Chilly Powder - 1/2 tsp 
  • Coriander Powder - 1/2 tsp 
  • Garam Masala - 1/2 tsp
  • Green Chilly - 2 nos
Method:
  • Pressure cook potatoes with enough water for 2-3 whistles or till cooked well.  
  • Heat oil in a kadai. Add finely chopped ginger, green chilly.
  • Mix in turmeric powder, red chilly powder, coriander powder, garam masala, lemon juice and salt to taste to the cooked potatoes.  
 
  • Mash potatoes with a masher. 
  • Cook till all the water is evaporated and masala is cooked well. This will take 10-15mins on low to medium flame.
  • Switch off the stove and wait till the mixture cools. Add 2 tbsp of dry flour to the masala and mix well. This helps the mixture to bond perfectly and from cracking.
  • Take 1 cup water in a mixing bowl. Add salt to taste and mix well.
  • Add wheat flour to the bowl and knead to a smooth dough.
  • Divide to lemon sized balls and keep aside.
  • Flatten one dough slightly thick and place a tbsp of masala. Fold the ends and seal well. Repeat for all the lemon sized balls.

  • Roll the paratha using a roller and pin. 
  • Cook on a tawa on medium flame till both sides are cooked well.

  • Serve hot.
